What is the point of them other than to power a computer?
would you get a performance boost if you got a 1000w replacing a 500w? or would it just be pointless?

you wouldnt only get a boost if your components arent getting enough power. Not only do they underclock themselves (make themselves slower) but your Power supply is taking such a huge beating it will die or worst case scenario: explode into flames (hasnt happened to many people though). 500 watts is usually more than enough to power everything except an SLi setup (2 video cards, either the 9800 or 7950GX2, or two of any video card) nVidia recommends a 550 watt with a 26A 12v rail for a single GX2, and you will need a 1200 watt PSU to run two of them.
